The leaves and stems of young plants are steamed briefly and eaten as a vegetable, older leaves and stems are stir-fried and have a flavor resembling taro leaf. The usually deep-red roots of garden beet can be baked, boiled, or steamed, and often served hot as a cooked vegetable or cold as a salad vegetable. They are also pickled. Raw beets are added to salads.

Annual or biennial herbs, more or less glabrous. Stems erect or decumbent, furrowed 30-80 cm high, simple to branched, and leafy. Leaves 4-9 cm x 2-6 cm, petiolate, dark green; radical leaves oblong, ovate, obtuse; upper leaves ovate-rhombic. Flowers perfect, greenish in 2-4 flowered clusters, forming a leafy or leafless interrupted spike. Bracts longer or shorter than clusters. Perianth lobes 0.2-0.6 cm oblong, obtuse, thickened at the base in fruit. Seeds reniform, dark-red.
